Mrs. Miller's Zucchini Alfredo Recipe

Cook according to package instructions. Rinse and drain. Add 2 Tblsp. butter; stir and set aside.
  • 3 Tblsp. canola oil
Heat over medium heat in a large skillet.
  • 3 cloves garlic, crushed
  • 4 cups shredded zucchini
Add saute for about 10-15 minutes. Drain if there is still a lot of moisture.
  • 1/2 cup milk
  • 4 oz. softened cream cheese, cubed
  • 1/2 cup chopped fresh basil
  • salt and pepper
Add and heat through until cream cheese is melted. Top with Parmesan cheese if desired. Serve over cooked noodles. Yield: 6 servings.

NOTE: My husband was skeptical about this dish when I first made it, but he ended up loving it! It's a great alfredo sauce with zucchini! ...Maria
