Simple Whole Roasted Chicken
- 2 tsp. salt
- 1 tsp. white sugar
- 1/8 tsp. ground cloves
- 1/8 tsp. ground allspice
- 1/8 tsp. ground nutmeg
- 1/8 tsp.ground cinnamon
-Mix well.
-Rub with spice mixture. Cover and refrigerate 24 hours.
-Preheat oven to 500 degrees. Stuff garlic into chicken cavity. Place the chicken, breast side down, on a rack in a roasing pan. Roast 15 minutes at 500. Reduce heat to 450 and continue roasting15 more minutes.. Baste chicken with pan drippings. Reduce heat to 425 and continue roasting for 30 more minutes to an internal temperature of 180 degrees. Let stand 20 minutes before serving. Yield: 6 servings.
NOTE: I have made this a number of times and it always turns out wonderfully moist and delicious when I follow the directions perfectly! We love it! -Maria
