- 2 cups grated zucchini
- 2 eggs, beaten
- 1/4 cup chopped onion
- 1/2 cup flour
- 1/2 cup Parmesan cheese
- 1/2 cup shredded Mozzarella cheese
- salt and black pepper to taste
-Combine in a medium bowl and stir well enough to distribute ingredients evenly. Heat a small amount of canola oil in a skillet over medium high heat. Drop mixture into skillet using a 1/4 cup measure and cook for a few minutes on each side until golden. Yield: 4 servings
